will cost less than pizza take out? We made this $10 family dinner last week when we had 3 kids all going in different directions (hockey season has officially started!). Whenever I make this I am always reminded of what a winner it is. I started the dinner at 5:33 and had it on the table at 5:58 exactly! It checks all the boxes for us: its easy, inexpensive, nutritious and most importantly my kids eat it!!! Leftovers make a great lunch the next day too. Its also versatile. It can be done with any kind of ground meat (turkey, beef, pork, chicken) or to make it vegetarian just substitute the meat with chick peas. Ready to try it and start your weekend with an easy $10 family dinner? Here’s the details: $10 Family Dinner: Ground Beef or Turkey Couscous Ingredients: 1 package of couscous (we used plain but you could use any variety) 1 tbsp olive oil 1 small onion, chopped 1 to 1.5 lbs of ground turkey or beef (can also use ground pork, ground chicken) 2 tsp dried cumin 14.5 oz can of black beans, rinsed and drained 2 tomatoes, chopped 1 avocado, chopped juice of 1/2 of lemon sea salt & black pepper, to taste Instructions: Cook couscous according to package directions. Fluff with work and set aside. Heat oil in large skillet over med heat, add onion, and cook for 3 minutes. Add meat & cook for 5 mins, stir until browned (while the meat is cooking chop the tomatoes and avocado so it is ready to go!). Drain off fat and return to pan. Add cumin, corn (or peas) & black beans to pan. Cook until heated, about 5 mins. Fluff couscous with fork and place in a large bowl. Add meat mixture and stir. Top with fresh tomatoes & avocado. Season w/ sea salt & black pepper and drizzle w/ lemon juice. Yum!
