Looking for a plan for dinner tonight? We have a quick and easy dinner plan you can easily put together and is perfect for outdoor dining: Balsamic Pork Tenderloin with Lemony Carrot & Spinach Salad & Easy Potato Salad. I prepped and cooked this entire dinner and found myself sitting at the table with my family in 45 minutes…that is calculated from the time I walked into the kitchen to pull the ingredients out of the fridge and pantry to the time I was having my first sip of Sauvignon Blanc at the table! And this meal is not just easy, it is very budget friendly too.
The ingredients for this delicious dinner came from our local Whole Foods Market in Bedford MA. I also wanted to share a really great bit of information I just learned about the store related to their involvement with the Global Animal Partnership, an organization that has set standards for animal welfare on the farms that supply into Whole Foods. Whole Foods works with this non profit organization to independently certify the farms they work with for all their stores across the US and Canada. I think that is a really great thing! As taken from the Whole Foods website:
“Global Animal Partnership is a non-profit organization dedicated to continually improving the lives of farm animals. They have developed the 5-Step Animal Welfare Rating Standards that rate how pigs, chickens, turkeys, and cattle are raised for meat. Now on to the recipes: all intended to feed a family of 5, all intended to make everyone at the table happy!
Balsamic Pork Tenderloin:
This is such an easy meal….it literally takes about 5 minutes to prep. It just involves mixing a few ingredients in a small bowl and spreading it on the pork before cooking for about 20 to 25 minutes. Don’t like pork? You can use boneless chicken breast instead.
1.5 to 2 lbs of pork tenderloin
2 tbsp of balsamic vinegar
3 tbsp olive oil
4 cloves of garlic, minced
sea salt & black pepper
INSTRUCTIONS:
Preheat oven to 425. Spray baking dish w/ cooking spray & place pork in dish. Season with salt & pepper. Mix remaining ingredients in small bowl. Spread over pork. Cook for 25 mins or until pork is no longer pink at thickest point. Remove & cover with foil. Let sit for 10 mins before slicing.
Lemony Carrot & Spinach Salad:
INGREDIENTS:
2 cups of baby carrots, chopped
2 to 3 large handfuls of baby spinach
2 to 3 scallions, chopped
1 clove of garlic, minced
2 tbsp olive oil
juice of 1/2 lemon
salt & pepper
INSTRUCTIONS:
Place spinach, carrots, and scallions in salad bowl. In small bowl, mix olive oil and lemon juice with fork. Pour over salad and stir to coat. Season with salt & pepper.
