Looking for a last minute recipe for a New Years party? This is one of my all time favorite apps and I often receive requests for the recipe afterwards. I originally got the recipe from my friend Monica and we now just refer to it as “The Dip”! I think it is the dip of all dips!
Its served warm so if you are bringing this to someone’s house I would suggest heating it all the way through at home and then just quickly rewarm it in the oven when you arrive. ENJOY!
INGREDIENTS:
10 ounce package of frozen spinach, thawed & drained of excess water
2 cloves of garlic, minced
1/2 cup sour cream (I use low fat or fat free)
3/4 cup mayo
1 cup shredded parmesan cheese
1/4 cup shredded swiss cheese
1 jar of artichoke hearts, drained and chopped (small size jar)
3 to 4 tbsp chopped pepperchinos peppers (ie Pastene brand) with also a bit of juice from the peppers (the secret ingredient!)
NOTE: the pepperchino peppers give this dip a bit of heat. If you do not want it to be spicy, you could reduce this ingredient by half or altogether. I will usually take 2 or 3 of the peppers and squeeze some of the juice into the dip before chopping them up to give it a nice kick!
INSTRUCTIONS:
Mix all ingredients in 8 x 8 baking dish (or similiar size dish) and bake at 350 for about 3o minutes, until hot and bubbly. Sprinkle with additional shredded cheese and serve with Nacho Chips (we like the Scoops variety) or cut up vegetables such as carrot and celery sticks. Serve and watch it disappear!!!!
