Dinner Touchdowns! 30 minutes or less for $10

Back to school and the fall season is in full swing in our house.  And that means those dreaded 6 am wake ups, earlier bedtimes, hockey season starts (yeah!) and getting back to routines.  It also means the days of just winging dinner on those lazy summer nights are over. To get through the busier weeknights, most of us need a plan for dinner that is easy and quick and puts a healthy dinner on the table, without spending an hour or more to pull it off.  With my two active teenage boys who are off to hockey many nights, if I don’t have a plan for dinner, the choice is late dinners when they get home or picking something up. (and that “something” is usually not a meal I am proud of – if I had an emoji of “Mom Guilt” it would be inserted right here!)

Thankfully, that plan for dinner is what The Dinner Daily is all about!  We are sharing two of our “tried and true” weeknight dinner recipes that we have been cooking forever: Balsamic Garlic Chicken and Turkey Skillet with Citrus Yogurt Sauce.  They are both quick and easy ( under 30 minutes time to table) and taste great.   They get healthy dinners on the table fast, without too much effort.  And added plus is all the major ingredients were on sale at my local grocery store, so the cost of both dinners was only about $10 for a family of 5!  That’s what we call a Dinner Touchdown!

Balsamic Garlic Chicken:

Why we love it:  I’ve been making this recipe for over 5 years and it’s great when you don’t have much time or energy at dinner time.  My kids always devour it.  You can also use chicken tenders or thin sliced breast to avoid cutting up the meat. TIP: if using whole chicken breast, place in the freezer for about 15 minutes before cutting- it makes it much easier.  (I also tend to go heavy on the garlic…can you ever have too much??)

Turkey Skillet with Citrus Yogurt Sauce:

Why we love it:  This recipe has a few different spices that some families might not use regularly (cumin and tumeric) which really give this dish a delicious Indian style flavor, without overpowering it.  The addition of the greek yogurt spiked with some lime juice at the end and a sprinkle of some sea salt makes the flavors sing. Served with some Naan bread from the grocery store and a fresh salad gets dinner on the table fast!
