Today is Cinco de Mayo and we have a super easy dinner idea for your family tonight. This recipe was recently featured in Positive Moms Magazine in an article featuring easy weeknight dinner recipes 5 ingredients or less that are also kid friendly.
My family has been using this recipe for years and when my daughter was 2 (she is now 17) she called it her “special bean treat dinner”. The best part about this recipe is you can dress it up for the adults with a fresh spicy salsa and guacamole while still keeping it simple for the toddler crowd. Best part is its all from one baking dish, from one recipe, for the whole family. Not only does it taste great, it will save you time in the kitchen. Now that is worth celebrating (with or without the margarita!). The recipe is below!
Easy Bean & Cheese Burritos Recipe
Ingredients:
1 onion, chopped
1 green (or red) pepper, chopped
15 oz refried beans
1 package of tortillas, burrito size
1 to 2 cups of shredded cheddar cheese
optional: sour cream, salsa, guacamole to serve
Instructions:
Preheat oven to 350. In large skillet, heat 1 tbsp of olive oil over med heat. Add onion & pepper, cook for 5 mins until soft. Add refried beans to skillet, let heat for a few mins so it becomes soft and once softened, stir into veggies. Spray a 13 x 9 baking dish w/ cooking spray. Lay each tortilla on flat surface, spread about 1/4 of skillet mix about an inch from edge. Sprinkle w/ some cheese & roll up. Place seam side down in dish. Repeat for each tortilla. Cover w/ foil & bake 10 mins until heated through. Sprinkle with a bit more cheese & serve w/ sour cream & salsa on side.
To serve to younger children, you can easily cut into slices to make for easy finger food, per photo below. Serve with some fresh fruit or a crisp salad to make an easy and simple weeknight dinner!
