This week we started preparing our holiday dinner party plans for our members…we love pulling this together each season but I especially love it for the holiday season! We know that this time of year, as festive as it is, can also bring about a whole lot of stress for people too. As it was an extremely busy day for us, we decided to do one of our tried and true favorite meals when you feel like you truly have no time to cook but still want to eat something healthy. This might be a good one to file away for those days and nights in the coming weeks when you feel like you have no time. Its great to prep in advance too and the flavors will only get better with some time.
We make it as a vegetarian meal, but you could easily add some cooked chicken or shrimp if you like. However, we find with the beans, chick peas, and avocado, you really will not miss the meat. We served it along side some all natural pita chips to give it some crunch. Its hearty and just full of flavor! Total time to prep: 15 minutes, with no cooking and minimal chopping..no kidding.
We are now ready to go back to working on those dinner plans…..the pumpkin and apple bread pudding smells wonderful and we can’t wait to share it with our members very soon!
KALE, BEAN, & AVOCADO SALAD:
Ingredients:
15 oz of chick peas, rinsed and drained
15 oz of black beans, rinsed and drained
1 cup of frozen corn, thawed
1 red pepper, chopped
handful of fresh cilantro (or parsley)
juice of 1 lime
2 tbsp of olive oil
2 tbsp of red wine vinegar
3 cloves of garlic, minced or finely chopped
sea salt and black pepper to taste
Instructions:
Make dressing: In a small bowl mix oil, vinegar, lime juice & garlic. Season w/ salt & pepper. In salad bowl, mix together remaining ingredients and drizzle w/ dressing. Mix to coat. Serve alongside some all natural pita chips or some whole grain crusty bread. Simple and easy!
