Don’t let this photo fool you…that is not pasta! Its zucchini and summer squash that is sliced into long ribbons with a potato peeler. Super easy and cooks fast! Then all you need to do is add some fresh lemon juice, some fresh parsley or cilantro, salt and pepper and you have a quick and easy side dish to make use of your summer gardens!
Here’s the quick and easy recipe:
Ingredients:
2 summer squash, end trimmed
2 zucchini, ends trimmed
juice of half a lemon
fresh flat leaf parsley, chopped (or can use cilantro or basil too)
2 to 3 chopped scallions
salt and black pepper, to taste
Instructions:
Using a potato peeler, slice both summer squash and zucchini into long ribbon like strips. Heat about 1 tbsp of olive oil in a medium skillet. Add veggies and lemon juice and heat on medium heat until just soft, about 5 to 8 minutes. Stir in fresh herbs, scallions, and season with salt and pepper. Yum!
