The countdown to summer vacation is in full swing in our house and last night we did one of our favorite summer time recipes that is so so easy! It is also vegetarian although you certainly do not need to be a vegetarian to enjoy this dinner! A few simple ingredients is all you need. We got the ingredients below at our local Whole Foods Market in Bedford MA:
A Quick Summertime Meal: Veggie Wraps
This meal only takes a few moments to prep as well and even though we used chopped zucchini and mushrooms along with the cole slaw mix (the cole slaw mix is a must!) you could use your own favorites like chopped carrots, summer squash, red or green peppers etc. Its a very versatile recipe and basically you can chop up whatever you like and saute them in a bit of olive oil and garlic.
The key to the delicious flavor is the bit of sour cream infused with fresh garlic and lemon juice seasoned with some sea salt and black pepper. Not to mention the addition of some shredded parm and low fat ricotta to give it a cheesy goodness my kids just love! The wraps are also great as leftovers (we had enough leftover for 2 lunches the next day) and are great for the lunch boxes!
We served the wraps with a fresh berry salad (all organic and all on sale at our Local Whole Foods market in Bedford MA). The whole family commented on how delicious the fruit was….especially the blackberries!
VEGGIE WRAP RECIPE INGREDIENTS:
1/2 cup low fat sour cream
2 scallions, chopped
1 tbsp lemon juice
2 cloves of garlic, minced or finely chopped
Sea salt and black pepper
About 1 tbsp olive oil (enough to saute)
1 zucchini, chopped
8 oz of mushrooms, chopped (we used brown baby bella)
2 cups of cole slaw mix (tri colored)
10 oz frozen organic corn (or use leftovers fresh from the cob)
1/2 cup shredded parmesan cheese
1 cup low fat ricotta cheese
1 package tortillas (burrito size)
In small bowl mix the sour cream, scallions, lemon juice, garlic, salt & black pepper to taste. Set aside. In a large skillet heat oil and add mushrooms, zucchini, corn & cole slaw. Let heat for 8 to 10 mins until veggies are softened. Stir in both cheeses until melted. Remove from heat. To serve, spoon the veggie mixture on tortilla, top with sour cream mix, roll up! Veggie mix also delicious on its own!
