The answer is yes. This easy vegetarian recipe is a great example of a meat-free dinner that uses reliable, comfortable flavors that most people enjoy.
This recipe is one of our member’s favorites and it is a great bridge for people that are interested in adding more meatless meals to their diet but have picky eaters or meat-loving family members that are wary of “strange’ ingredients. This one is a real keeper.

It also is a perfect one to make the night before or earlier in the day, and then just finish in the oven when it is time for dinner. Stuffed Shells Florentine is one of the recipes my kids ask for all the time, although they just call it “the big pasta shells with cheese”. We also receive many positive member comments on this one so you can make it with confidence!
Easy Vegetarian Recipe – Stuffed Shells Florentine
Ingredients
12 oz jumbo pasta shells | 25 oz tomato pasta sauce |
15 oz ricotta cheese, part skim | 1 1/2 cups parmesan cheese |
1 1/2 cups shredded cheddar cheese, low fat | 1 onion, medium, chopped |
1/2 tsp garlic powder | 1/2 tsp oregano (dried) |
1 egg | 3 cups baby spinach, chopped |
aluminum foil |
Instructions
Preheat oven to 350. Cook shells according to package. Drain and set aside. Spread one cup of pasta sauce across 13 x 9 baking dish. In large bowl, combine ricotta and 1 cup each of parmesan and cheddar cheese. Mix in onion, spices egg and spinach. Take each shell and fill with the cheese mixture and place in dish. (Don’t worry if some cheese spills out.) Cover shells with remaining sauce and sprinkle with remaining shredded cheese. Cover dish with foil and bake for 20 minutes or until bubbly.
