Need an easy weekend dinner idea that is not only healthy but quick and easy to prep early in the day? Try our Baked Veggie Ziti recipe (details below) for an easy relaxed dinner time. I made this dinner early yesterday morning and had it all ready to go during our typical busy Friday nights when everyone is running in different directions. Saves us from the pizza delivery or Chinese take out every time.
This is also vegetarian so its not only healthy but economical too! We picked up the ingredients at our local Whole Foods Market (Bedford, MA) and as you can see above, there are not a lot of ingredients required to make this hearty dinner!
The best part? The kids all eat it (although in the spirit of full disclosure I should add that one of my sons did do his best to eliminate all elements of the spinach from this plate…). After about 15 minutes in the oven, this is what we had on our plates: Its a great weekend meal without a lot of effort or money. With all these healthy and natural ingredients supplied by Whole Foods Market, its a good way to start the weekend! Easting healthy does not have to be expensive….you just need to plan!
Ready to try it? Here’s the recipe:
1/2 of 16 box of ziti pasta
15 oz can diced tomatoes, any flavor
24 oz jar of tomato pasta sauce
3/4 cup of shredded cheddar cheese
3/4 cup of shredded parmesan cheese
1 tbsp of olive oil
2 shallots, finely chopped
2 to 3 summer squash, chopped
10 oz of chopped frozen spinach, thawed and drained of excess water
INSTRUCTIONS: Preheat oven to 350. Cook pasta. Drain & return to pan. Stir in pasta sauce, tomatoes, and cheeses. Set aside. In skillet, heat oil on med & add shallots. Cook for 5 mins until soft. Add squash & cook for about 5 mins more until just tender. Stir in spinach & add veggies to pasta. Spoon into 13 x 9 casserole dish and cover with foil. Bake for 15 to 20 mins until hot and bubbly. Sprinkle w/ some additional cheese before serving.
