This is a good one for all those self declared non-seafood eaters….
This is one of our most popular and versatile fish recipes that will work on almost any type of fish fillet. It only uses six basic ingredients, including the olive oil you most likely have in your pantry already. We have used it on haddock, cod, tilapia, flounder, salmon…anything on special. This week we did it with Mahi Mahi to take advantage of the great special at Whole Foods Market (Bedford MA). Mahi Mahi is delicious! Although it is a great fish to do on the grill (would be great for Father’s Day!), we chose to do in the oven using our Herbed Lemon Fish recipe. We have heard from many members that this recipe has won over even some of the most stubborn “I hate seafood” family members. As always, we started with some simple, healthy ingredients:
The Herbed Lemon Fish recipe uses a simple garlic and lemon herb coating to spread on the fish. Takes just a few minutes to put together and I used my Mini-Prep (mini food processor that I use almost daily…its a great tool for saving time in the kitchen but that is a blog topic for another day….) to make the chopping and mixing quick and easy:
This just gets spread over the fish (takes 2 seconds), placed in the oven and in 10 to 15 minutes (depending on what cut of fish you are using and the thickness of the fillet) it’s done. We put it with two of our favorite sides: Sauteed Greens and Healthy Mash, which is really just sweet potatoes and regular baking potatoes mashed together. Sweet potatoes are such a healthy veggie and trying to get my kids to eat them plain is not always easy. I started mashing them up with a few regular potatoes and with a bit of butter and seasoning, they are happy to eat this nutritional powerhouse.

Ingredients:
1.5 to 2 lbs fish fillets of choice (we used mahi mahi but haddock, cod, tilapia etc all work too)
juice of 1 lemon
2 cloves of garlic, minced
large handful of fresh parsley (flat leaf), chopped
1 tbsp olive oil
1/2 cup seasoned bread crumbs (we used Italian, 365 Everyday from Whole Foods)
Instructions:
Preheat oven to 375. Combine bread crumbs, garlic, parsley, lemon juice, & olive oil in a bowl (we combined ours in our mini prep). Spray baking dish w/ cooking spray. Place fish in dish and spread bread crumb mixture over it. Bake for 10 to 15 mins or until fish is just cooked through. Serve with Healthy Mash and Sauteed Greens.
