The other am I was treated to this delicious homemade granola recipe during one of our weekly operations meetings. It was not only delicous but also high in protein and wholesome ingredients. It was so good I suggested we share the recipe with our readers. Make up a quick batch to have easy mornings or to have on hand for a healthy after school snack.

Cover 2 large baking sheets and cover with aluminum foil or parchment paper. Spray lightly with oil. Preheat oven to 300 degrees.
Combine:
7 cups old fashioned rolled oats
1 cup flaked coconut (I’ve used both sweetened and unsweeted at times.)
1 cup wheat germ
1 cup peanuts, chopped (the original recipe calls for walnuts and almonds)
1/2 – 1 cup sunflower seeds
1/2- 1 cup pumpkin seeds
½ tsp salt
Separately, combine:
1/2 cup of agave syrup (could also be honey, maple syrup or molasses)
1/2 cup vegetable oil
2 tsp vanilla
Mix the wet ingredients with the dry ingredients. Spread on baking sheets and bake for 15 minutes.
Pull out and stir/flip the granola. Bake for another 10-15 min. Let cool.
Stir in:
1 cup golden raisins
1 cup craisins
There is no science with this granola. You can really add whatever ingredients you want. I’ve added chopped apricots, hemp seed, flax seed, currants, etc. Just vary ingredients and quantities based on taste. Store in airtight container. It lasts quite a while.
