Need a short cut for dinner tonight? This is one of our favorite go to weeknight dinners. Its easy quick comfort food perfect for October! We have eliminated a few steps from the traditional casserole which makes it easy to get on the table with less time and mess. Many of our Dinner Daily subscribers have told us this has become a weeknight staple in their house too. The best part? Clean plates all around from the kids!
INGREDIENTS:
6 large potatoes (russet or baking)
2 tbsp butter (for mashed potatoes)
1/4 cup milk, low fat
1.5 lbs ground turkey or beef
1 tsp dried oregano
1/2 cup beef or chicken broth
1 tbsp worcestershire sauce
1 tbsp flour
10 oz frozen peas, carrots, & corn (can also use chopped fresh veggies but we like the convenience of frozen, and its just as healthy!)
1 cup shredded cheddar cheese, low fat
INSTRUCTIONS:
Bring large pot of water to boil. Add potatoes & cook until fork tender, about 10 mins. Drain potatoes, return to pan & mash. Stir in milk, butter, salt & pepper. Set aside and keep warm. Spray large skillet w/ cooking spray & cook meat over med heat until browned, drain fat & return to pan. Add oregano, broth, worcestershire, & flour. Stir & cook for 5 mins until slightly thickened. Add veggies & cook until heated through, about 5 mins. Remove & stir in cheese. Place potatoes on plates, top with meat from skillet, and season w/ salt & pepper to taste. Now watch it disappear!!
