For those who are carb conscious or gluten-free, preparing spaghetti squash as a side instead of pasta is a scrumptious alternative! And it is super easy to make.
Forget about trying to cut the ends off and splitting in half this extremely hard-to-cut vegetable – just roast the whole thing in the oven at 400 degrees until tender (about 30 minutes.)
Then, carefully remove the squash with two oven mitts. Now, you can slice the ends off the squash and cut it in half.
At this point, scoop out the seeds and flesh and set aside (you can roast the seeds too if you want!)
Take a fork and scrape the insides of the squash, transferring the strands into a bowl.
The strands have the consistency of angel hair pasta.
Now, you have your “pasta”! You can stir it into a frying pan with a little olive oil and garlic, add fresh pesto to it, or serve it with plain old pasta sauce. Delicious and healthy!
