Anyone need a fast dinner on the table tonight? If you have some ground turkey (or even ground beef or chicken) you most likely have everything else for this super quick weeknight dinner. Although we do use the term “alfredo”, don’t get the wrong impression. Its under 400 calories and still delivers on flavor! We use this recipe in our weeknight plans and we often get messages from our members indicating it was a hit at the dinner table.

Ingredients:
1.5 lbs of ground turkey (we used 20 oz package-can also use ground beef)
about 1/2 of 5 oz package of baby spinach (or regular spinach, chopped)
14.5 oz of diced tomatoes
1 tbsp butter
3 tbsp flour
1/2 cup shredded parmesan cheese
1/2 cup shredded cheddar cheese, low fat
1 cup milk, low fat (we used skim!)
2 scallions, chopped
Instructions:
Melt butter in small saucepan, add flour and stir until smooth. Add milk & cheeses & stir until melted. Set aside. Spray skillet with cooking spray and add turkey. Cook until browned. Stir in spinach, tomatoes, scallions & cheese sauce and cook until heated through. Serve to happy family!
