Its St. Patrick’s Day again and here is a classic corned beef and cabbage recipe for your Irish celebrations! It’s a no frills, yet easy, wholesome and delicious recipe to get you into the spirit! Shopping list is below the recipe for your convenience.
Serves 5+ Adults

- 4 lbs. gray corned beef
- 6 large carrots cut in large chunks
- 8 medium onions quartered
- 1 large cabbage head cut into large wedges
- 1 tsp mustard
- Fresh parsley and thyme (about 1 cup chopped)
- Salt and Pepper to Taste
Cover meat, carrots, onions with cold water in large stock pot
Bring to a boil and then reduce to simmer for 3 hours
(skim off fat as it rises to top)
In a separate stock pot place 1 lb. of red skin potatoes cut in half and boil until soft. Season with salt, pepper, and butter to taste.
30 minutes before serving, add cabbage to pot for slight crunch in cabbage for texture.
Serve with brown mustard, Irish Soda Bread, Guinness Beer
