Crockpot Mexican Chicken

Simple, delicious weeknight slow cooker Mexican chicken recipe.  Toss the ingredients in the crockpot in the morning, turn it on, and you'll have dinner waiting for you at the end of the day!

Ingredients
  

  • 2 lbs boneless chicken thighs
  • 16 oz salsa mild
  • 15 oz black beans drained & rinsed
  • 1 green pepper chopped
  • 1 packet taco seasoning mild
  • 1 cup chicken broth
  • 1 cup sour cream low fat

Method
 

  1. Spray slow cooker with cooking spray and add chicken, salsa, black beans & green pepper.
  2. Mix taco seasoning in bowl with broth and pour over chicken.
  3. Cook on low for about 6 hours or high for 4 hours.
  4. Right before serving stir in sour cream.
