Ingredients

  • 2 tbs olive oil
  • 2 tbs red wine vinegar
  • 2 tbs fresh lime juice
  • 2 garlic cloves minced
  • 15 oz black beans drained & rinsed
  • 15 oz chick peas drained & rinsed
  • 2 cups baby kale chopped
  • 1/2 cup fresh cilantro chopped
  • 1 red/orange/yellow bell pepper chopped
  • 1 cup frozen corn
  • 1 avocado peeled & chopped

Instructions

  • Make dressing: In a small bowl mix oil, vinegar, lime juice & garlic.
  • Season with salt & pepper.
  • In salad bowl, mix together remaining ingredients and drizzle with dressing.
  • Mix to coat.
