Easy Ham Stir Fry
An easy recipe to use up left over ham, along with a healthy dose of vegetables.

- 1 1/2 lbs ham chopped
- 2 tbs soy sauce or tamari
- 2 tbs rice vinegar
- 1 1/2 tbs honey
- 1 tbs cornstarch
- 1/4 cup water
- 1 tbs olive oil
- 2 garlic cloves minced
- 8 oz mushrooms sliced
- 8 oz water chestnuts drained (optional)
- 1 cup frozen peas
- 1 cup baby carrots chopped
Chop ham into bite size pieces. Mix soy sauce, rice vinegar, honey, cornstarch & water in small bowl to make sauce. Heat oil in large skillet, add garlic and cook for 30 seconds. Add veggies. Cook for 5 to 8 mins until just tender. Add ham and sauce & stir. Heat for about 5 more mins until warmed through.
