Ingredients
  

  • 2 lbs salmon fillets
  • 1/3 cup cornmeal polenta
  • 1/3 cup seasoned bread crumbs
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/3 cup ranch salad dressing light

Instructions
 

  • Preheat oven to 350. Mix cornmeal, bread crumbs, chili powder, garlic powder & salt. Spray baking sheet with cooking spray or line baking sheet with foil or parchment. Lay fish on baking sheet and coat salmon with dressing. Then, sprinkle top of fish with the bread crumb mixture. Bake for 10 to 15 mins or until fish flakes easily with fork. Total time will depend on thickness of fish.
