Tomato & Lima Bean Salad

Ingredients
  

  • 1 tbsp olive oil or butter
  • 10 oz frozen lima beans
  • 1 container grape tomatoes we used yellow, sliced in half
  • 1/2 small red onion chopped
  • juice of 1/2 lemon
  • handful fresh parsley chopped

Method
 

  1. Heat oil (or butter) in skillet over medium heat. Add lima beans and onions and cook for about 5 to 8 minutes until warmed and just starting to get tender. Add tomatoes, lemon juice, salt & pepper to pan. Continue to heat for 5 minutes more. Remove from heat and stir in fresh parsley.
