Steak Panzanella Salad

This easy steak salad recipe is super easy to get on the table, hearty, and full of flavor.  Toasting bread and adding it to the salad makes it even better. Enjoy!

Ingredients
  

  • 4 to matoes chopped
  • 2 tbs olive oil
  • 1 tbs balsamic vinegar
  • 1 garlic clove chopped
  • 1 1/2 lbs sirloin steak tips/flap steak
  • 1/2 loaf italian bread torn into 1 inch pieces
  • 1/2 cup fresh basil torn

Instructions
 

  • Preheat broiler or grill to high. In large serving bowl or deep platter, add chopped tomatoes and toss with oil, vinegar, garlic, and salt & pepper to taste. Spray a shallow baking pan (or sheet pan) with cooking spray. Place steak on pan and season with salt & pepper. Broil for 6 to 8 mins, turning once, or until desired level of doneness. Remove steak from oven and place on plate. Loosely cover to keep warm. Add bread to same pan, drizzle with a bit of olive oil and stir to coat. Place under broiler for 3 to 5 mins until toasted and golden. Slice steak into large pieces and add steak and bread to serving bowl. Combine with tomato mix and top with basil.
