GREEK INSPIRED SALMON
This is a super easy and tasty salmon dinner, inspired by the flavors of Greece!

- 2 lbs salmon fillets
 - 1/3 cup plain greek yogurt fat free
 - 1/2 bunch fresh parsley chopped
 - 1 tbs fresh dill chopped
 - 3 tbs capers strained & chopped
 - 2 garlic cloves minced
 - 2 tsp fresh lemon juice
 - 1/2 tsp salt
 - 1/4 tsp black pepper or to taste
 
 
Preheat oven to 350. Place salmon, skin-side down, over foil or parchment on a baking dish. Mix together all ingredients except salmon. Spread over top of salmon. Cook fish until it is opaque & flaky, about 10 to 20 mins, depending on thickness of fish.
