GREEK INSPIRED SALMON

This is a super easy and tasty salmon dinner, inspired by the flavors of Greece!

Ingredients
  

  • 2 lbs salmon fillets
  • 1/3 cup plain greek yogurt fat free
  • 1/2 bunch fresh parsley chopped
  • 1 tbs fresh dill chopped
  • 3 tbs capers strained & chopped
  • 2 garlic cloves minced
  • 2 tsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper or to taste

Instructions
 

  • Preheat oven to 350. Place salmon, skin-side down, over foil or parchment on a baking dish. Mix together all ingredients except salmon. Spread over top of salmon. Cook fish until it is opaque & flaky, about 10 to 20 mins, depending on thickness of fish.
