Lentil, Corn, and Mozzarella Salad

A super nutritious and healthy lentil salad that is great as a main, or as a spectacular side for a simple main meal.

Ingredients
  

  • 1 1/2 cups lentils dried
  • 1 tbs olive oil
  • 2 garlic cloves minced
  • 10 oz frozen corn
  • 2 cups grape tomatoes or cherry, sliced
  • 4 scallions chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tbs fresh lime juice
  • 1 tsp turmeric
  • 1 tsp cumin ground
  • 8 oz fresh mozzarella cubed

Instructions
 

  • Cook the lentils per package directions. Drain and set aside. In medium skillet, heat oil on med. Add garlic and cook for one min. Add corn and cook for 5 to 8 mins, until corn is slightly browned and tender. Combine corn with lentils in large bowl. Add remaining ingredients except mozzarella & stir gently. Top with the fresh mozzarella. Season with salt & pepper to taste.
