Asian Pork with Peanut Sauce
Try this delicious pork tenderloin recipes with the flavors of Southeast Asia.
Ingredients
- 1 cup coconut milk light
- 1/2 cup peanut butter
- 1/4 cup soy sauce or tamari, low sodium
- 3 tbs fresh lime juice
- 3 tbs brown sugar
- 2 garlic cloves minced
- 2 tsp coriander ground
- 1 1/2 lbs pork tenderloin cut into 1/2 inch medallions
Instructions
- In large bowl, whisk the first 7 ingredients to make a smooth sauce. Place pork in bowl, pour marinade over, and let sit 10 to 20 mins. Heat oil in pan until hot. Remove pork from marinade and cook in pan for 5 to 7 mins, turning once until no longer pink. Remove pork. Pour marinade into same pan & add 2 tbs. water, bring to boil, reduce heat & simmer for 3 mins. Serve with pork.
