Here’s a delicious quick grilled chicken sausage recipe that is fabulous for the summer, or anytime you feel like firing up your grill! This 30 minute chicken sausage recipe has only six ingredients, and like all Dinner Daily recipes is easy to make, delicious and healthy.
This one is going to be a keeper in our house as not only did it taste great but it was so easy and used just a few ingredients, 6 to be exact and that includes the olive oil! When summer squash is in season, this easy recipe is a great one to make several times (our members can favorite it and add it to their weekly menus whenever they want!). This is also a great recipe for those busy weeknights when you need to keep dinners simple. The pre-cooked sausage makes this extra quick but you can use the non-cooked variety, just be sure to adjust the cooking time.

Here is the quick and simple recipe for you, just in time for dinner tonight!
Grilled Chicken Sausage with Squash and Capers
1 package of cooked chicken sausage, sliced into 1 inch pieces (we love Al Fresco All Natural Chicken Sausage and used the Roasted Garlic variety for this recipe)
2 summer squash, sliced into 1 inch pieces
2 zucchini, sliced into 1 inch pieces
1 tbs olive oil
2 tbs capers
1/4 cup fresh parsley, roughly chopped (about small handful). You can also use any other fresh herbs such as basil or cilantro or a combo of all 3!
Heat grill on med heat. Cook sausage until browned on both sides, about 8 to 10 minutes. Place both summer squash and zucchini in a serving dish and add olive oil. Season with salt and pepper and toss to coat. Place veggies in a grill basket and cook on grill with sausage until browned and tender. Return sausage and veggies to serving dish, and combine with capers and parsley. Serve it with a simple salad and you have dinner done in 30 minutes!
