Smoked Paprika, garlic, and lemon is a classic flavor combination that works well with many recipes. This one is no exception! It is very easy, requires little prep, and makes use of boneless chicken thighs. If you do not make use of this cut of meat, you should give this recipe a try. This very economical cut of chicken is often overlooked for the much more popular boneless chicken breast. Although boneless chicken thighs might seem a bit messier to work with, they are really delicious in many recipes. They also are great for the slow cooker. Here is the easy recipe for Smoked Paprika and Lemon Chicken:
Lemon & Smoked Paprika Chicken
- 2 lbs boneless chicken thighs
- 1 tbs olive oil
- 1 lemon juiced
- 4 garlic cloves minced
- 2 tsp smoked or regular paprika
- 1/2 tsp thyme dried
- Place chicken in large shallow dish. Mix remaining ingredients in small bowl and pour over chicken. Turn chicken to coat. Let marinate for up to 30 mins if time allows. Turn on broiler or grill to med/high heat. Place chicken on broiler pan or grill and cook for about 20 mins or until chicken is cooked through (internal temp of 165), turning over half way.
