Are you trying to use up any leftover ham but just cannot get excited about a night of leftovers that is a complete repeat of your holiday meal? We have a really easy weeknight dinner recipe to help you use up any leftover holiday ham without even touching the microwave.
This is so simple and you can use whatever veggies you have on hand. We used red and green peppers, baby carrots and some chopped cauliflower. We have also used snow peas, frozen peas, and water chestnuts. The point is use whatever you have in your crisper that will hold its crunch. It cooks in about 10 mins and if you do the prep in advance, dinner can come together very quickly. The kids loved this one too!

Easy Ham Stir Fry
Ingredients
- 1 1/2 lbs ham chopped
- 2 tbs soy sauce or tamari
- 2 tbs rice vinegar
- 1 1/2 tbs honey
- 1 tbs cornstarch
- 1/4 cup water
- 1 tbs olive oil
- 2 garlic cloves minced
- 8 oz mushrooms sliced
- 8 oz water chestnuts drained (optional)
- 1 cup frozen peas
- 1 cup baby carrots chopped
Instructions
- Chop ham into bite size pieces. Mix soy sauce, rice vinegar, honey, cornstarch & water in small bowl to make sauce. Heat oil in large skillet, add garlic and cook for 30 seconds. Add veggies. Cook for 5 to 8 mins until just tender. Add ham and sauce & stir. Heat for about 5 more mins until warmed through.
