Easy Vegetable Curry (Easy Vegan Curry)
Ingredients:
- 1 1/3 cup of coconut milk, light
 - 2 tsp curry powder
 - 1 tbs fresh ginger, minced
 - 2 cloves garlic, minced
 - 1 medium onion, chopped
 - 1 tsp salt
 - 1 lb cauliflower, chopped into bite size pieces
 - 2 large carrots, chopped
 - 2 tomatoes, chopped
 - 15 oz chickpeas, drained and rinsed
 - 3 loose cups of baby spinach (a couple good size handfuls will do just fine!)
 - 1/4 cup fresh cilantro, chopped (can also use fresh parsley if you prefer)
