Super Easy Parmesan Chicken Bake
Ingredients
Method
- Preheat oven to 375. Spray baking dish with cooking spray.
- Place chicken breasts in dish and season with salt & pepper.
- In small bowl mix yogurt with parmesan and spread on each chicken breast.
- Bake for about 25 to 30 mins until chicken is cooked through and no longer pink inside (internal temp of 165 degrees).

- Cut chicken into cubes. In saucepan, melt butter & add flour. Stir & cook 1 min. Add 1 cup of milk & the broth, stir over medium heat until thickened, about 5 mins. Stir in oregano & season with salt & pepper. Set aside. Heat oil in large skillet & add chicken. Cook until browned on all sides. While chicken is cooking, make the dough for the dumplings: in a bowl, combine baking mix with remaining milk until sticky dough forms. When chicken is browned, add sauce & veggies to skillet and stir until combined. Spoon large tablespoons of dough on top of mix in skillet. Turn heat to low, cook uncovered for 10 minutes, then covered for 10 mins more. Place one or two biscuits on each plate, then spoon chicken & sauce over top. Yum!

- Combine bread crumbs & cheese in bowl. Place milk & eggs in another bowl, beat with fork. Place flour in 3rd bowl. Dip pieces of chicken first in flour, then egg, then breadcrumbs. Continue until all are coated. Heat oil in large skillet on med heat. Add chicken & cook for about 5 mins each side. You may need to do this in batches. Cook each piece until no longer pink inside and internal temperature is 165 F.
