While I’m writing this post, it’s winter here in Boston and the kind of day when a warm, hearty meal really hits the spot. But I think no matter where you live or what the temperature, this rigatoni, broccoli and chicken recipe is a winner.
If you are looking for a fast, delicious dinner idea, give this recipe a try. It’s simple and combines all the goodness of vegetables, chicken, and pasta into one delicious easy to make dinner.
When you prepare, let the skillet get a warmed up before adding the chicken – that way the chicken will get a little browned when you are cooking it which will give this dish an extra dimension that is delicious. As with many of our recipes, don’t feel like you have to stick strictly to the ingredient amounts. If you bought a little more than 1.5 lbs of chicken – add it in! Have a little broccoli left over, add it in! Need to feed some extra hungry teenagers – put more pasta in! The meal will still be delicious – just remember that when you add additional ingredients, the nutritional information will no longer be accurate. But feel free to make these your own – and maybe have some leftovers to make your co-workers jealous of your lunch. This rigatoni, broccoli and chicken recipe makes great leftovers.
