“What NOT to Feed your Children” with the shocking photo of what constitutes “chicken” in certain processed chicken products (ie packaged chicken nuggets) we would share with you a great healthy substitute for chicken nuggets – Dinner Daily Chicken Schnitzel. This is a favorite weeknight recipe that gets a healthy dinner on the table fast. And best of all: It’s super kid-friendly! The recipe is Chicken Schnitzel and when it appears on our meal plans we receive lots of comments from subscribers on how their kids loved it! My own son told me “this chicken is even better than the food at Chilis!”- and he meant it as a sincere compliment. Try it out next time you are looking for an easy, healthy and quick dinner for your family.
Our Kid Pleaser Chicken Schnitzel (Substitute for Chicken Nuggets!)
Ingredients:
1.5 to 2 lbs of thin sliced chicken breast (can also use chicken tenders and make it “Healthy Chicken Nuggets!) 3/4 cup seasoned bread crumbs 3/4 cup shredded parmesan cheese 1/4 cup milk 2 eggs 1/2 cup flour (whole wheat or regular) 2 tbsp olive oilInstructions:
Place breadcrumbs & cheese in bowl and combine. Place milk & eggs in another bowl -beat with fork. Place flour in 3rd bowl. Dip the chicken in flour 1st, then egg mix, then breadcrumb mix. Continue until all are coated. Heat oil in large skillet on medium heat. Add chicken & cook for 5 to 6 mins each side until cooked through and no longer pink inside.
