Do you or someone in your family insist they hate salmon or seafood? This easy salmon recipe for picky eaters is for you!
This simple weeknight dinner uses salmon in a slightly different way and therefore may appeal to those of you that perhaps need a more creative way of trying this healthy fish. We have tested this recipe on many people who have declared, without any doubt in their voices, that they will not eat salmon or seafood at all. They hate the stuff. We just love to see the surprise in their faces upon those first few bites when they realize they actually do like it prepared this way, they do like the taste of salmon ( anyone else hearing Dr. Seuss right now?)
So ready to serve it to your most ardent salmon refuser? The key is there is a ton of flavor in this meal and the salmon is more of an accent rather than the main flavor. Its still a great way to get this healthy fish into your diet. We should also note that in this test version pictured here we did not use the fresh tomatoes to top the dish. You can try it with or without them. Either way its delicious! Its also a fairly economical dinner because you really only need 1 lb of salmon for a 5 person serving due to all the other ingredients in this recipe. All up, it took us about 35 minutes to prepare this dinner
TIP: since the salmon is cooked separately from the orzo, you could easily cook it in advance and have it ready to add to the skillet. This recipes is also a great way to use up any leftover salmon.
Salmon Recipe for Picky Eaters
INGREDIENTS:
1 lb of fresh salmon
1/2 box of orzo pasta
1 tbsp olive oil
2 garlic cloves, chopped
1 small onion, chopped
8 oz sliced mushrooms (we love this with Shitake, but any variety works)
1 cup chicken broth
2 tbsp flour
1 cup frozen peas
1/2 cup half & half
2 tomatoes, chopped
2 to 3 scallions, chopped
juice of 1/2 lemon
INSTRUCTIONS:
Preheat oven to 375. Place salmon in baking dish and season with salt & pepper. Cook for about 15 minutes until cooked through, remove and let cool. Break salmon up into bite size pieces and set aside. Cook orzo according to package directions, drain and place in serving bowl. Heat oil in large skillet. Add garlic, onion, & mushrooms. Cook for about 5 mins. Stir in flour & chicken broth until smooth. Add half & half, salmon, & peas and cook until heated through. Remove from heat and add to the orzo. Top with fresh tomatoes & scallions and drizzle with lemon juice. Great with a simple side salad for a complete meal.
