In celebration of heart health awareness month, we are sharing three of our favorite heart healthy salmon fillet recipes. These easy recipes- Broiled Salmon over Corn Salsa, (pictured), Greek Inspired Salmon, and Cornmeal Crusted Salmon-were developed specifically for our new Heart Healthy menu option and follow the guidelines set by the American Heart Association (“AHA”).
There are lots of reason why fish is an important part of a heart healthy diet. The AHA recommends two servings of fish a week, especially fish high in omega-3 fatty acids, such as salmon. But there are other reasons why our team, and our members, love these easy salmon fillet recipes:

- The recipes use simple and easy to find ingredients.

- The recipes follow the heart healthy criteria set by the American Heart Association.

BROILED SALMON OVER CORN SALSA
Ingredients
- 2 lbs salmon fillets
- 1 tsp basil dried
- 1 tbs olive oil
- 1/2 red onion
- 1 green pepper
- 2 cups frozen corn
- 1/4 cup fresh parsley optional
Instructions
- Preheat broiler and spray broiler pan with cooking spray. Place salmon on pan and sprinkle with basil. Season with salt & pepper to taste. Broil fish for 10 to 15 mins, or until desired doneness. Total time will depend on thickness of fish. While fish is cooking, prepare corn salsa. In large skillet, heat oil on med heat. Add onion and cook for 2 mins, stirring frequently. Add pepper and cook for few mins more. Stir in corn and cook for 5 to 6 mins until corn is soft. Remove from heat and stir in parsley if using. To serve: place corn salsa on plate and top with piece of salmon.
GREEK INSPIRED SALMON
Ingredients
- 2 lbs salmon fillets
- 1/3 cup plain greek yogurt fat free
- 1/2 bunch fresh parsley chopped
- 1 tbs fresh dill chopped
- 3 tbs capers strained & chopped
- 2 garlic cloves minced
- 2 tsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper or to taste
Instructions
- Preheat oven to 350. Place salmon, skin-side down, over foil or parchment on a baking dish. Mix together all ingredients except salmon. Spread over top of salmon. Cook fish until it is opaque & flaky, about 10 to 20 mins, depending on thickness of fish.
CORNMEAL CRUSTED SALMON
Ingredients
- 2 lbs salmon fillets
- 1/3 cup cornmeal polenta
- 1/3 cup seasoned bread crumbs
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/3 cup ranch salad dressing light
- I
Instructions
- Preheat oven to 350. Mix cornmeal, bread crumbs, chili powder, garlic powder & salt. Spray baking sheet with cooking spray or line baking sheet with foil or parchment. Lay fish on baking sheet and coat salmon with dressing. Then, sprinkle top of fish with the bread crumb mixture. Bake for 10 to 15 mins or until fish flakes easily with fork. Total time will depend on thickness of fish.
