Trying to figure out what to make for dinner this week? Look no further than this easy recipe that has just come out of our test kitchen: Cod with Beans and Spinach. As we mentioned last week when we posted another easy recipe for simple dinners, in the coming weeks we will be sharing with you some of our easiest dinner recipes as we move into the busy back to school and fall season. Getting an easy and fast dinner on the table that is healthy and family friendly is not always an easy task so we hope this series of recipes related to what to make for dinner will help you ease back into routines this fall.
Ingredients:
- 1 tbs olive oil, divided
- 2 garlic cloves, minced
- 2 lbs of fresh cod (can also use haddock, halibut or other white fish fillet of choice)
- 1 cup chicken broth
- 2 tbs fresh lemon juice
- 10 oz frozen spinach
- 15 oz cannellini beans, drained & rinsed
- 1 pinch red pepper flakes, crushed (optional)
Instructions:
Combine oil & garlic in shallow dish. Add fish and turn to coat and let sit at room temp for 10 mins. Combine the broth & lemon juice in a large skillet and heat on med/high. Bring to boil. Add the spinach, beans & red pepper flakes (if using). Continue cooking, breaking up spinach to help it thaw. When spinach is mostly thawed, place fish on top of spinach and cover. Continue to cook until fish flakes easily with a fork, about 10 mins, depending on thickness of fish. Season to taste with salt and pepper.
