Downtown Disney called The Boathouse. It did not disappoint. We had the best meal of our vacation with wonderful food, attentive staff, and a location that just cannot be beat. Its right on the water with this amazing collection of some of the most beautiful and unique boats I have ever seen. For more info on The Boathouse CLICK HERE. I wish I had a photo to share with you but we were seated in an actual boat, converted to a dining table, right in the middle of the dining room. The kids were thrilled and the festive happy feeling I was looking for was in place. We then went on to spend 2 plus hours here enjoying an amazing meal followed with most amazing Smores Baked Alaska for dessert! This was an absolute showstopper and it was a perfect way to end a fabulous meal! I ordered the Fish Tacos for my dinner and they were delicious! For those of you that are not crazy about seafood or just cannot get your kids to eat it, these easy fish tacos might be an easy way for you to get fish into your diet. Wrapped up in a tortilla with some fresh veggies and salsa, some avocado and.or sour cream, you will be more focused on how delicious it all tastes vs how you are eating fish. After we returned back home, I was inspired to tweak our own version of Easy Fish Tacos for use in our Dinner Daily weeknight menus for our members. We just had these for dinner the other night and I even got my 15 year old, a self proclaimed seafood hater, to try them. It is also a fantastic way to use up leftover fish from other dinners. Works great with all kinds of fish: haddock, cod, tilapia, salmon, even shrimp! Here’s the recipe, just in time for dinner tonight!
EASY FISH TACOS WITH AVOCADO AND TOMATO SALSA:
Ingredients: 1.25 to 1.5 lbs of mild white fish (such as cod or haddock) juice of 2 limes 2 garlic cloves, minced or finely chopped 1/4 cup of olive oil 3 cups of tri-colored cole slaw mix (this is the raw veggies only, in salad section, NOT premixed with dressing) 1 package of tortillas (flour or corn) Avocado & Tomato Salsa: 1 avocado, peeled and chopped 1/2 small red onion, chopped juice of 1/2 lemon 2 tsp red wine vinegar 3 tbsp sour cream 2 tomatoes, chopped Instructions: Place fish in shallow dish. Mix lime juice, oil & garlic in small bowl & pour over fish. Marinate for 30 mins. Heat a large skillet on medium heat & add both fish & marinade to pan. Cook 10 mins until fish is cooked through & flakes easily. Remove, flake into pieces & keep warm. Add cole slaw mix to pan & cook 5 mins or until just starting to turn soft. Turn off heat. For salsa: combine avocado, onion, lemon juice, vinegar, & sour cream in bowl & mash until smooth. Stir in tomatoes & season w/ salt & pepper. To assemble tacos: heat tortillas according to package. Spoon fish and cole slaw mix onto tortilla. Top with some of the tomato & avocado salsa & roll up! Serve with some fresh fruit and you have a healthy and easy dinner!Does this recipe inspire you?
