Although it is wonderful in the summer when corn is in season, we make this corn, mozzarella and lentil salad recipe year round. It is so so good, and healthy for you too.

Below is our favorite lentil salad recipe. We make this year round and use it both as a main meal, or as a side. When using it as a main, we typically top it with chicken or shrimp. Try it out – it will do your body good!
Lentil, Corn, and Mozzarella Salad
Ingredients
- 1 1/2 cups lentils dried
- 1 tbs olive oil
- 2 garlic cloves minced
- 10 oz frozen corn
- 2 cups grape tomatoes or cherry, sliced
- 4 scallions chopped
- 1/4 cup fresh cilantro chopped
- 2 tbs fresh lime juice
- 1 tsp turmeric
- 1 tsp cumin ground
- 8 oz fresh mozzarella cubed
Instructions
- Cook the lentils per package directions. Drain and set aside. In medium skillet, heat oil on med. Add garlic and cook for one min. Add corn and cook for 5 to 8 mins, until corn is slightly browned and tender. Combine corn with lentils in large bowl. Add remaining ingredients except mozzarella & stir gently. Top with the fresh mozzarella. Season with salt & pepper to taste.
